Happiness Salad

Yesterday I was so thrilled to be creating in the kitchen a new colorful and delicious salad. I’m going to call this Happiness Salad. It doesn’t take many ingredients but is a powerhouse of nutrition.

To make Happiness Salad:

3/4 cup of lentils

3/4 cup of quinoa (rinsed well beforehand)

1 tbsp of organic vegetable soup base

Water

3 large celery stalks chopped finely

1/3 of a purple onion chopped finely

1/3 of a yellow bell pepper chopped finely

1/3 of a red bell pepper chopped finely

1/3 of an orange bell pepper chopped finely

3 tbsp Original Rice Wine Vinegar

2 tbsp honey OR 2-3 dates chopped finely

Kirkland’s Organic No-Salt Seasoning


Bring lentils and quinoa (covered one inch with water) and the vegetable soup base to a very slow simmer and simmer until done but not mushy; drain and set aside to cool

Chop all vegetables

Place lentils and quinoa in large mixing/serving bowl

Add all other ingredients and stir/fold gently

Chill in refrigerator. Eat as a side dish or you can top romaine lettuce and greens with it.
