Finding a gluten-free bread that is actually good for you is a hard task. After searching for recipes and trying a few, I have finally perfected one that I just love. It's easy, loaded with healthy fats and fiber and tastes great as toast or for sandwiches. Here is my recipe. Enjoy!
Gluten-Free Almond Flax Bread
2 cups blanched almonds (flour)
1 cup ground flaxseed
1/4 cup psyllium husks (ground; I use Organic India)
2 eggs
1/3 cup egg whites
1 tsp baking powder
1 tsp baking soda
2 tbsp honey
3 tbsp melted coconut oil (refined if you don't want the taste)
1/4 cup apple cider vinegar
1/4 cup water
Mix all ingredients well. Use melted coconut oil but let cool before adding in. Line an 8"x4" bread pan with parchment paper. Fill with bread batter and press down to form a nice flat loaf (don't leave it high in the middle, otherwise it may not bake all the way through). Bake at 350 degrees for 50 minutes. Remove from pan and remove the parchment paper and cool the loaf on a cooling rack. It's beautiful. It's delicious!
