Easy Protein Power Pancakes

Okay, so this is the second pancake recipe I'm posting to my blog. I actually think I like this one the best. It's high in protein among other essential nutrients.
Why bother buying processed pancake mixes from the grocery store when you can make your own using organic, non-GMO ingredients fresh from your kitchen. Here's the recipe that makes 6, 6-inch pancakes. Enjoy!
2 cups Einkorn flour
2 scoops Sun Warrior unflavored protein powder
1 tsp baking soda
1 tsp baking powder
3 tbsp hemp seeds
3 tbsp chopped walnuts
2 tbsp ground flaxseed
1 tsp Ceylon cinnamon
3 eggs
1 tsp vanilla extract
1 tbsp coconut oil
4 tbsp honey
1 cup almond milk (unsweetened & unflavored)


Mix ingredients together by hand until you achieve a thick but pourable batter consistency. Heat as you normally would for pancakes in a very lightly oiled pan.

33g carbs
7g fiber
6g natural sugars/honey (no added sugars)
14g fat
105 cholesterol
High in: Leucine, Iron, & B12; Also high amounts of B1, B2, B3, B12, Choline, Copper, Magnesium, Selenium, and Zinc
