Modern Wheat Alternative, Dairy-Free and Egg-Free Pancakes

Blueberry Walnut Pancakes

In my efforts to cut down the amount of modern wheat and gluten from my diet to reduce inflammation in my body, and to assist with more weight loss, the Veganishta came up with these simple and healthy pancakes. I could not believe how delicious they turned out. I made them a second time and carefully made notes for the recipe, which is:

1/2 cup spelt flour 1/2 cup kamut flour 1 tsp baking soda 1 cup walnuts, finely chopped 2 tblsp flaxseed 3 tblsp coconut oil 1 tblsp brown rice syrup 1 tblsp vanilla 1-1/4 cups almond milk 1 cup frozen blueberries

Mix all ingredients together. Blend all dry ingredients with a fork. After adding the liquids, the batter will become thick and lumpy. Make sure to have a good, non-stick (toxin-free, of course) hot pan or griddle. The amount of batter will make 6, 4-inch pancakes, or 8-10 mini pancakes. Enjoy!
